Caliche White Rum is the result of a collaboration that started several years ago between sixth generation master distiller of the legendary Don Q rums Roberto Serralles, and nightlife maverick Rande Gerber. The name comes from the stony, limestone rich rock that the cane grows on at the Sorralles estate. To produce the rum, Serralles employs some of his unique proprietary methods the first being multiple distillation to create a very pure and precise distillate. While being aged in white American oak casks, small portions of solera aged rums, at different maturity levels, are carefully integrated into the rest of the rum. Finally a carbon-active filtration process is used to remove the color while leaving the flavors intact resulting in a clear complex spirit. Notes include vanilla, caramel, and a nutty spice with underlying nuance of orange pith. Have it on the rocks or fashion it into a great seasonal cocktail.
