Caliche
Caliche Rum is a super-premium white rum meticulously crafted at the historic Destilería Serrallés in Ponce, Puerto Rico—a family-run distillery with a legacy spanning six generations. The name “Caliche” pays homage to the region’s abundant limestone, reflecting a deep connection to terroir.
Born from a visionary partnership between sixth-generation distiller Roberto Serrallés and hospitality entrepreneur Rande Gerber, Caliche seamlessly blends time-honored tradition with modern style. Caliche undergoes five distillations for remarkable purity, then ages in a solera system comprising three tiers of American white oak barrels, including select rums aged up to 20 years.
A final charcoal filtration removes color while preserving exceptional depth and complexity.
The result is a uniquely complex aged white rum—crystal clear yet bursting with flavor. Tasting notes include vanilla, caramel, citrus, oak spice, and hints of tropical fruit. Critics praise Caliche as dry enough for daiquiris yet rich and nuanced enough to stand in for aged rum in classic cocktails.
